French Toast

French toast, so simple yet so delicious. Never knew that a piece of bread soak in milk and beaten eggs can be so mouth-watering! This was my first time making something sweet rather than my preferred savory foods, but even though it was a fail, it was still enjoyable. I definitely made the mistake of using artificial vanilla extract rather than pure vanilla extract since the taste of the chemicals go throughout the whole piece of bread which isn’t pleasant.

I never planned to make french toast in the first place, but one morning I didn’t know what to eat and somehow, french toast popped up in my mind. I quickly searched up an easy recipe, and thankfully, I had all of the ingredients already which made things easier. Though the end results ended in a soggy piece of bread, it was a good experience.

Ingredients;

  • 6 sliced Texas toast or thick cut bread
  • 2 large eggs
  • 1/4 cup milk or cream
  • 1 tsp sugar
  • 1/4 tsp cinnamon
  • pinch of salt
  • splash of vanilla extract
  • butter and vegetable oil for cooking

Instructions;

  1. In a mixing bowl, crack in your 2 eggs and dump in your 1/4 cup of milk, 1/4 tsp cinnamon, and your splash of vanilla. Mix throughly with a mixing tool until smooth.
  2. On your stove, place a skillet on medium to medium-high heat and pour in around a tsp of oil and little scoop of butter. Make sure the butter has a golden colour before you place the bread in.
  3. Take your batter and quickly get a coat of the egg on each side of the bread and let the excess drip before you place it on the pan
  4. Once the bubbles on the sides of the bread get smaller, take a peek before you flip the bread onto the other side.
  5. Repeat step #4 for the other side
  6. Once both sides are golden brown, place it on a plate, and add a little more butter for the next patch.
  7. Once you used all of the batter or have your desired amount, you’re ready to serve.

Note;

You can add fresh fruit or syrup to spice up your french toast!

Gochujang Fried Rice

If you don’t know what gochujang is, gochujang is a red chili paste that comes from Korea, and the taste is to die for! It’s savory, sweet, and spicy all in one bite. You can usually find this in most asian markets for a small tub of this, and I would really recommend this to everyone to have a taste.Image result for gochujang

During this time, I was going through a “korean phase” where I found every korean food item mouth-watering. So I went to my asian market to find some kimchi (fermented cabbage) but instead, I found a tub of gochujang. I speculated what the taste might be, but I took the risk and bought it, mostly because it looked spicy and I love spice.

This fried rice was honestly a September favourite and I loved it so much that I ate it almost every day. Now that I remade it, it’s quite mediocre and it doesn’t really live up to the expectations that I put on it. If you aren’t a spice lover then this fried rice is perfectly fine since, in my opinion, the rice isn’t that spicy at all, but more flavourful(?). The taste of the paste is hard to explain, and you can’t really pinpoint the exact taste so my description of the paste is quite terrible.

Using the paste itself isn’t the “proper” way of making it since using kimchi is more common in Korea. Kimchi itself uses the same peppers as gochujang so it doesn’t really matter which way you do it, but if you want a more sour taste, use kimchi instead.

Ingredients; 4 servings

  • Gochujang paste
  • 2 cloves of garlic, chopped small
  • 1 small onion, sliced
  • 10 prawns
  • Sesame oil
  • Soy sauce (optional)
  • Red pepper powder (optional)
  • 4 eggs
  • Cooked rice (portion depends on personal preference)
  • Sesame seeds (optional)

Instrutions;

  1. Chop the garlic into small chunks and slice the onion into thin pieces.
  2. Scoop around 2-3 big spoonful of gochujang paste into a bowl and add in some sesame oil & soy sauce(if preferred) and mix. You may add in red pepper powder too if you prefer the mixture to be more spicy.
  3. Using part of the gochujang mixture you’ve prepared, season your prawns.
  4. Throw the onion and garlic into the frying pan and fry them until there’s a nice odour of garlic and onion.
  5. Then add in your prawns and cook them for about 30 seconds – 1 minute.
  6. Add in your cooked rice and gochujang mixture together.
  7. Mix the gochujang mixture with the rice until even (takes around 1 minutes).
  8. Make sure your prawn is fully cooked, then you’re reading to serve!

Notes;

I obviously didn’t use every ingredient from that recipe since I found it useless and too extra so I just removed almost half of the list. Instead of onions and garlic, I use chopped green onions and minced ginger as a subsitute, but do what fits your pallete.

Beef Lettuce Wraps

At this time, I felt like utter trash and I was honestly feeling like I was slowing dying with all the instant noodles I’m inhaling down. So I decided to make the hardest decision of my life, and remove instant noodles from my life. Well, that’s a lie. I still eat it every now and then, but now that I’ve cut down the number of instant noodles, it tastes so nasty now. Enough about that, and move on to the actual recipe. As the proud Asian I am, I’m so used to eating rice with every meal, and for once, I’m rice free. The original recipe called for ground chicken, but the merciless beef lover I am, I used ground beef instead.

Useless comment, but this was also made in 2017 so I can’t remember how it exactly tasted, but I vividly remember my sister saying it was really salty. Guess I added too much hoisin sauce then. Whoops.

Ingredients;

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon Sriracha, optional
  • 2 green onions, thinly sliced
  • Kosher salt and freshly ground black pepper, to taste
  • 1 head butter lettuce

Instructions;

  1. Heat olive oil in a saucepan over medium high heat.
  2. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
  3. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes.
  4. Stir green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
  5. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

Soy Sauce Fried Rice

As the true Asian I am, your first recipe has to be rice related, and if it isn’t, you’re a disgrace to our culture. But enough joking around and lets cut to the chase. I honestly didn’t use a recipe for this and just used my visual influences aka my mom’s cooking. This was made in 2017 so I can’t remember the taste of it, but it was most likely mediocre at its best, but as the rookie I was, I probably thought it was the best fried rice ever. My memory is very hazy and I can’t remember the process of this so I will be using an already existing recipe from the internet.

I don’t recommend making my version of soy sauce fried rice since it’s very bland and unpleasant, and recommend that you make the one from the recipe I found on the internet which you can find in the credits section.

Ingredients;

  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 3 to 4 cups leftover rice
  • 3 green onions, chopped
  • 1/2 tablespoon cooking oil
  • Sea salt to taste

Instructions;

  1. Combine light soy sauce, dark soy sauce, and sugar in a small bowl. Mix well.
  2. Heat up your skillet/wok on medium-high heat, and then pour your oil in. Wait for the oil to heat up before you pour your rice in.
  3. Dump your rice on the skillet/wok and move the rice around with your spatula for a few seconds then leave it.
  4. Get your soy sauce mixture and drizzle it on your rice
  5. Using your spatula, move the rice around until each grain of rice has an even coat of the soy sauce mixture
  6. Turn the heat down to medium and dump your chopped green onions on the rice. Mix well.
  7. Carefully taste the rice. Add salt to your prefered taste and mix the rice for the last time.
  8. Turn off the heat and transfer the rice onto a bowl or a plate, and the fried rice is ready to be served.

Note;

I removed some ingredients and instructions from the original recipe, and did my best attempt to make this recipe as similar as my attempt at soy sauce fried rice.
